Khwanjai’s Banana Coconut Recipe is simply delightful! It’s the perfect balance of sugar, salt coconut and banana, the perfect finisher to a lovely spicy Thai Banquet.
This is a really simple recipe with a couple of Khwanjai’s really useful perfection tips for flavour and presentation in the video tutorial.
How to Make Banana Coconut Desert
Ingredients: Serves 4
500gr Ripe Bananas
500ml Coconut Milk
1/4 Cup Sugar
Fresh Pineapple Slices
1 ts Salt
1 Large bowl of water with 1tbs Salt added
Preparation:
Peel bananas slice lengthwise and cut into spoon sized chunks, drop into the bowl of salty water until needed
Cooking Instructions:
Grab a sauce pan and heat before pouring in the coconut milk and bring to the boil stirring occasionally
Once it has boiled add your Bananas, salt and sugar, bring back to boil and simmer for 4 or 5 minutes
Test Bananas for softness and taste test; add sugar or salt to your liking
Serving suggestions:

Khwanjai’s Top Tips:
Use ripe Bananas, don’t forget the salt, the coconut milk will thicken up a little, lovely and add a little pineapple or mango for colour, it is actually a grey looking dessert without the extra fruit.
