Drunken Noodles Recipe Tutorial

Drunken-Noodles-RecipeThai Noodles come in many shapes and forms, and this recipe is only one which uses wide, flat rice noodles. Drunken Noodles get their name allegedly as a cure for a hangover, presumably because it’s quite a spicy dish which can be just a light lunch on its own or a full blown meal.

They should really be called Drunkards Noodles, the recipe below is for one person, but changing the amounts in this recipe is easy and it is possible to make this recipe using egg noodles as well as shoelace rice noodles.

It’s surprising how refreshing it is, with wonderfully contrasting textures, flavours and aromas, combined with a lovely after taste which makes for quite a satisfying meal, hangover or not.

How to Make Drunken Noodles
Ingredients:
For one good sized portionDrunken-Noodles-Ingredients
1 Cup of “Fresh” Wide Rice noodles” about 100g
100 gr Pork
3 Baby Sweet Corn
1 Cup Kale
1 Cup Holy Basil
1 1/2 Tbs Kachai when shredded
1 Tbs Fresh Green Pepper Corns
3 Thai Chillies
2 Garlic Cloves
1 Tbs Sugar
1 Tbs Fish Sauce
1 Tbs Thai Seasoning Sauce
2 Tbs Oyster Sauce
1 ts Chicken Stock Powder ( 1/2 cube)
2Tbs Oil

Preparation:
Cut Pork into thin ribbon pieces
Bash and crush the Chillies and Garlic
Wash and simply use a potato peeler to shred the Kachai include the skin in the recipe
Chop Vegetables into bites size pieces, you want them nice and crunchy, so with Kale, plenty of stem and not too much leaf. (Green or Savoy cabbage works instead of Kale)

Cooking Instructions:
Heat the oil medium high heat, put in chillies and garlic until you have that lovely aroma, (5-10 seconds)
Add Pork and stir until white (about 2 minutes)
Add Kachai, Kale, Baby Sweet Corn and Green Peppers and stir for about 1 minute, lovely smell here
Add Noodles, Seasoning Sauce, Fish Sauce, Oyster sauce, Chicken Stock and sugar, continue stirring for a further minute
Add Holy Basil and stir about 1/2 a minute and……..
Done! You just learned how to make Thai Drunken Noodles

Serving Suggestions:
Serve in a bowl and eat with chop sticks – try that if you’re drunk or hung over.

You can use egg noodles in this recipe and it still tastes great, not strictly sticking to the traditional format but works a treat in my opinion, just follow the same recipe.

Since making the video, Kachai has become much more readily available (in the UK at least) as a fresh ingredient. You will need to visit your local Asian store and if we can get it in our small local town then it’s going to be even easier in larger towns and cities.
