Pad Ma Ma Noodles With Pork

Pad-Ma-Ma-RecipeStrictly speaking Pad Ma Ma is a meal in itself and quite filling so not usually eaten with other dishes. Ma Ma Noodles are the defacto Thai brand of dried egg noodles however you can use any brand.

The authentic Thai recipe below will make enough for 2 people or one very hungry one, a quick and easy recipe too. It’s eaten everywhere in Thailand and you will even see street vendors selling it from a motorcycle all kitted out for cooking.

It can be varied in many ways just by substituting ingredients, so if you want chicken or prawns instead, go for it In this tutorial we are using pork.

How to Make Pad Ma Ma With Pork

Ingredients:Pad-Ma-Ma-Ingredients
150g Lean Pork (or anything)
1 Egg
1 Cup Bean Sprouts
1 Cup Chinese Lettuce (chopped)
2 Cloves Garlic
1 Packet of Dried Noodles (60-100g)
1 tbs Sunflower oil
1 tbs Fish Sauce
2 tbs Oyster Sauce
1ts Sugar
Chilli Powder (If you like it spicy)

Preparation:
Wash and slice the Pork nice and thin (bite size)
Chop the garlic medium
Rinse bean sprouts and lettuce, chop the lettuce chunky
Boil the noodles briefly (about 1 minute) remove and leave.

Cooking Instructions:
Put oil into a hot wok add the garlic, stir until you have great aroma
Add the pork, stirring until you get white colour
Add the egg, stir and cook until soft scrambled
Now add the vegetables and mix in well, it gets quite dry momentarily, no waiting now…
Add fish sauce, sugar, oyster sauce and stir again, now you will get a nicer colour
Now add the noodles (if you like spicy, add a little Thai chilli powder) stir and mix for about 2 minutes and …..  Done! You just learned how to make Pad Ma Ma

Serving Suggestions:
Serve in a bowl with some tomato, cucumber and some more lettuce on a side plate, (especially if you spiced it up) or serve with fried egg on top (Thai style), add chilli powder for extra spiciness, if you’re using our Red Chilli Powder, or even Red Chilli Sauce, but taste test before you go mad and add too much like my son did first time.

A nice easy and quick recipe with an unedited video so you can watch every detail, Pad Ma Ma is pretty much available every 100 metres in any major town in Thailand and is a hearty snack meal, not usually served with other Thai food but still can be a great compliment to many Thai recipes as it’s a subtly flavoured dish, unless you spice it up.
We added a little chilli powder, but that’s entirely optional

It’s meant to be moist, not wet, however you can add a little hot water to suit yourself, Jules likes it on the dry side = less mess on the white shirt!

You can also use practically any cabbage or kale instead of the Chinese Lettuce or even Iceberg lettuce.
