A simple and filing dish to compliment any meal, it is subtly savoury but you can pep it up a bit with some authentic Thai seasoning, see serving suggestions below.

How to Make Chicken Fried Rice

Ingredients:chicken-fried-rice-ingredients
Serves 2
1 Chicken Breast medium/large
1 Packed cup cooked Jasmine rice
2 Eggs
1/2 Small Onion
1 Tomato
1 Clove Garlic
2 Spring Onions (scallions)
1 tbs Oil
1 tbs Fish Sauce
2 tbs Oyster Sauce
1 tbs Thai Seasoning Sauce
1 ts Sugar
1 Lime
Freshly Ground Black Pepper

Preparation:
Wash and thinly slice 1 medium/large sized chicken breast

Cut onion, tomato leave together

Crush garlic and chop

Wash cut spring onions

Cooking:
Turn on medium heat pour oil into wok add garlic stir until you get that lovely garlic aroma

Add chicken stirring until it turns white

Add egg stir again until egg firms up and then add the rice stirring together

Next add fish sauce, sugar, oyster sauce and seasoning sauce stir 3-4 minutes

Lastly add onion, tomato, and spring onion, stir until onion softens and…….
Done! You just learned how to make Chicken Fried Rice

Serving suggestion:
Serve with a slice of lime and grind black pepper on top to taste! Also for those of us who like to pep it up a bit, try our Pik Nam Paa be careful with this (Chilli Fish Sauce) because its red hot or maybe try our Chilli Red Sauce also very hot/spicy and salty.

When adding the garlic at the start, it should only take 5 – 10 seconds to start turning golden brown if it takes longer yer fat aint hot enough, it’s not a problem, just wait until it starts and by then – it’s hot enough. If you started too hot, don’t panic, the chicken may stick at first, just press on and keep stirring.
When adding the eggs to the wok, the idea is to cook the eggs before you mix in with the meat and garlic, this stops the eggs welding themselves to the meat and garlic, you’ll see in the video
You can adjust the flavour to your liking by varying the sauces, taste them neat first so you know what flavours you are dealing with and be careful with the spicy ones!
After the video I added a squeeze of lime, and put too much on, which actually spoiled the balance of flavours slightly, so the tip is…. careful with the lime!
The finished meal should be moist but not soggy
