Khwanjai’s Top Tips:
If you know how to make it, use rendered pork fat to fry the beef, what a fantastic flavour. If you don’t know how to make it watch this How To Render Pork Fat Video.

Look out for the taste test, similar to the Spicy Egg Salad recipe you should taste the dressing before you add the ingredients and again before you add the Beef to get a better idea of where you want to be, remembering that it’s impact will be softened by the addition of the beef. You’ll see in the video I thought it was a tiny bit salty but after a few tastes I realised that was just the first flavour and it all came into balance in subsequent slurps.

Something I didn’t know about Lime Juice… Watch and find out….

Alternative vegetables? Try Radish instead of spring onions (scallions) or shallots. You could also use bell peppers but be aware they will sweeten things up a bit particularly red and yellow ones

How about some fried shallots or garlic to sprinkle on top as a garnish?

Print the recipe so you can make your own notes. Khwanjai still does this every time she tries something new especially with a versatile recipe like this and she experiments.
