Prawn Stir Fry with Asparagus

A lovely savoury sweet prawn stir fry is made refreshingly crunchy with the addition of fresh Asparagus. A truly delicious King Prawn Stir Fry Recipe! (Or Tiger Prawns)

Flavour comes from the Prawns and Asparagus of course but it’s rounded off with just a few Thai ingredients, including my favourite, the lovely Oyster sauce.

Asparagus Prawn Stir Fry is a classic and not to be missed, quick and easy, with some great top tips in the  video tutorial. Marvellously quick and easy recipe, delicious, you’ll love it, I know I did!

How to Cook a Prawn Stir Fry

Ingredients:Prawn-Asparagus-Stir-Fry-Ingredients
Serves 2
200g King or Tiger Prawns
2/3 Cup Asparagus
3 Cloves Garlic
1 Tbs Thai Seasoning Sauce
2 tbs Oyster Sauce
1 ts Sugar
1/2 ts Chicken Stock Powder
2-3 Tbs Oil
1/2 Cup Water

Preparation:
Peel and gut the prawns, see our How to Prepare Prawns Thai Style video tutorial
Bash the garlic and remove skin
Chop Asparagus about 1″ logs

Cooking:
Blanche the Asparagus first by boiling some water in a wok of pan and throw in the asparagus, wait until water boils again and remove (great crunchy veggies tip in the video tutorial)
Now add 2-3 Tbs oil to a hot wok and throw in the garlic, stir fry briefly until they soften
Then add the Prawns and stir fry until cooked (lovely aroma here)
Next add the asparagus and a little water
Next comes the seasoning sauce, sugar, chicken stock and oyster sauce
Stir everything together briefly and you’re done!

Serving Suggestions:
Serve with some lovely Jasmine rice as a meal on it’s own or as we would have it….

Stick it on the table next to Khwanjais Chicken Red Curry and maybe a delicious Thai Omelette or the delicious (souffle like), Steamed Eggs plus you could add (while you have the prawns out) Tom Yum Goong (Spicy Sour Prawn Soup) the idea being to have a series of dishes that contrast and compliment each other! Finish the banquet off with a big bowl of fresh crunchy veggies, such as lettuce, cucumber, coriander, green beans, Thai green egg plants and so on!
