Making Fresh Tamarind Puree

tamarind No recipe here, just a Top Tip how to make your own Tamarind Puree as used in many Thai recipes.

Tamarinds have a sour sweet flavour, (predominantly sour) easy to do if you can get hold of Tamarind like in the packet below.

You will get far better results using this method than by using the puree from a jar with all its preservatives etc.

Khwanjai’s Top Tips:
Most Asian stores stock these nowadays; they sometimes have the seeds/stones still in them. They are a bit like dates for colour and consistency, sort of soft but firm. It is much better than the readymade puree when you can make your own.
