Khwanjais Special Fried Rice or as we call it in the family Pineapple Fried Rice to avoid confusion with Khwanjais version of the humble Egg Fried Rice which is what most mortals expect when they order Special Fried Rice in a restaurant or take-away. So what I’m saying here is that Special Fried Rice (Pineapple) goes one step beyond the norm and provides an ornate and colourful bounty for your guests that is not only delightful to gaze upon but tastes bloody marvellous to boot!! 15 Ingredients go into the making of this Special Fried Rice Recipe, but don’t be daunted by that because as she says her self its a quick and easy Thai stir fry, if you don’t count prep time – about 10 minutes.  The cooking time is only about five minutes choice is yours.

Here’s a different hamburger recipe, it’s “Hamburger Thai style” and they even make them with fish too but this is the Pork version, so no bad smells and they’re laced with coconut and curry paste.

You can make these very easily and the only awkward ingredient (depending on where you live) is Kaffir Lime leaves the rest is straightforward. In the full video tutorial we give a lovely alternative to Kaffir lime which works a treat.

The Burgers themselves are small hand formed patties dropped into deep oil and cooked for about 2 minutes, the ingredients used in the making of the mix makes for very light and fluffy burgers indeed. Very tasty and usually eaten with some kind of spicy sauce but of course the choice is yours.

Beef Waterfall gets its name in typical Thai style in that its a descriptive of what it looks like when cooking.  You see Thai beef aint lean, like wot us westerners are used to!  Oh no, Thai beef is really organic stuff and full of marbly bits o’ fat and stuff so when you barbecue it the fat dribbles out into the fire.

Here’s where a falang may get confused. Nuea Yaang Nam Tok directly translated means Beef BBQ Water Fall and the dripping=falling oil=water drops into the fire which flares up and kinda looks like a fiery waterfall.  That’s the theory as best as I can understand it anyway.

Other things to note are the number of people stating that Beef Waterfall is a salad.  Is is not!  However it is used in various forms as part of a Salad recipe known as Yarm Nam Tok which is essentially this recipe which is then doused in another sauce/dressing and served up as a hot salad.  After all that you’re lucky if the meat is still hot unless of course you live in a very hot climate as we do here.

What a bloomin palava for a fried rice recipe that stinks of fish! 
Hey that’s nothing!  You should try some of the Northern Thai dishes where they leave the ingredients to go bad in a tin before they cook them,  Phoooey!!

Anyway, back to the plot…  As one who is NOT renowned for being a smelly fish lover I find myself yet again pleasantly surprised by this dish.  Yes it has a fairish fishy aroma but that actually pales when you actually tuck in and it balances very nicely with all the other side ingredients which include, fresh chillies (chopped), cucumber, green mango, shallots, flash fried dried shrimp and shredded omelette with a secret ingredient.

Penang Goong – Prawn Curry

Boy oh boy is this a delicious curry, I don’t mind telling you after shooting this quick video I polished off the lot apart from a couple of Prawns that Khwanjai snaffled while I was fighting off the cats.  You can actually hear the cats rustling the bag of Prawn shells as I’m speaking.

Anyway, back to the recipe which is actually a very simple recipe with few ingredients, the secret is in the cooking, and Khwanjai has this down to perfection with this recipe.

Trust me when I tell you I have had this all over Thailand and only once did it come up to this standard which was 5 weeks ago when we visited friends in Aou Nang near Krabi and we dined in a cheep and cheerful road side eatery, which prompted us to make the tutorial.

Thai Pumpkin Custard Dessert, a delicious sweet Thai coconut custard filling for the noble but bland Pumpkin.

The trick with this recipe is two-fold, fresh Coconut milk and small Pumpkins oh and follow Khwanjais recipe to the letter until you get the hang of this one or (as she says) culinary disasters will abound!

What a wonderful Chicken Stir Fry recipe this is.  Great for beginners learning to cook Thai food as there is not a huge array of exotic ingredients to wrestle with and only a small amount of lighly cooked chillies, their impact softened by garlic and sweet dark soy sauce, not forgetting the delicious favourite Oyster sauce.

Stir Frying is generally fast and furious on high heat which takes a little skill and practice. (I’m not talking about the supermarket pre-made or frozen stir fries that any kitchen clown can manage.)  I’m referring to real fresh ingredients that need care and timing as well as the right heat to balance the flavours into a harmonious culinary delight your guests will praise you for, plus ask you how you made it.  Get Prepered to Stir Fry

Well I certainly learned my lesson during the making of this video, well not this actual video, but the video tutorial itself

Beef Stir Fry Recipe

Beef Stir Fry with Oyster Sauce

Can you spot the cats in the background, the bigger one is called Moo Daeng which means Red Pork the other one is just a kitten (not one of hers, but they look alike) and hasn’t been given a name yet?  Moo Daeng was given her name by Mep; Khwanjai’s daughter and she also named our Dog!  “Moo Kgrob”  (Crispy Pork) so we’re looking for suggestions for naming the kitten which is male (like it matters) feel free leave your suggestions in comments below.

On to the recipe, and a lovely one it is too Beef Stir Fry Recipe with “Nam Man Hoye” which (for the non-Thai speaking) is Oyster Sauce, my favourite Thai ingredient, apart from the grub itself.

The trick with this recipe is cooking it quick enough so the meat remains tender the veggies are crunchy and long enough to cook everything through to bring out all the flavours. Get it right for your guests delight!!
