Delicious Prawns, lean chopped chicken and glass noodles form the basis of this recipe but all the excitement comes from the vibrant dressing guaranteed to excite even the most jaded palate!

Glass Noodle Salad is often served with other dishes, see serving suggestions below for more details. You can happily serve as a light lunch, as it is a delicious meal in itself.

How To Make Glass Noodle Salad

The Ingredients:Glass-Noodle-Salad-Ingredients
Serves Two
100g Peeled Tiger Prawns
150g Chicken
2 Spring Onions
2 Large Cloves Fresh Garlic
2 Full Bulbs of Pickled Garlic
2-4 Thai Chillies
1/2 Medium Onion
1/2 Cup Chinese Celery Leaves
1/3 Cup Glass Noodles
1 Tomato
1 Lime
1 ts of Chicken Stock Powder
1 Tbs Sugar
1 Tbs Fish Sauce
Water

Preparation:
Peel and gut prawns as per our Thai Prawns Video
Chop Chicken as per our Thai Minced Meats Video (public video tutorial)
Soak dried Glass noodles in cold water for 10 minutes then remove, cut in half and leave
Chop Garlic and deep fry as per Frying Garlic Video Tutorial

Pound Chillies and fresh Garlic, (a blender will overdo this)
Chop Onions, Spring Onions, Celery and Tomato as per photo

Slice the limes how you see fit but there is a tutorial for How to Cut Limes Thai style for easy pip avoidance

Cooking:
Starting with a wok full of simmering water add the prepared prawns, remove when cooked
Next pop in the chopped chicken and break up as you cook, remove when cooked
Next into the wok – Glass noodles; when they become see through
That’s it for the cooking bit!
Chuck them all together in a large bowl and leave to cool
Done!

Bring It All together:
Using a large mixing bowl first one in is the pickled garlic plus 2 Tbs of the juice (from the pickle jar)
Add the juice of 1 lime
Next add some pounded chilli and garlic
A little sugar and chicken stock and 1 Tbs fish sauce keep stirring until sugar dissolves
Now taste test and adjust as you like it
Now you mix in the meat and noodles coating with the dressing before..
Adding onions and tomatoes and mix again
Last but not least spring onions and celery leaves
And Serve

Serving suggestion:
Serve onto a bed of lettuce dressed up with some shredded carrots and mint leaves if you like. Goes great as a healthy snack lunch for two or an addition to the table to compliment something such as Thai Sweet Chicken, Barbeque Spare Ribs or even Gai Tod  aka…How is your Thai?

Basically any Thai BBQ will be in harmony with this delicious Salad.

Jules is not a big fan of glass noodles usually but always enjoy this salad with its refreshing dressing.
