Thai soup recipes are unique in the world, they are an interesting blend of contrasting flavours usually made from whatever is at hand often quite watery with lovely delicate flavours, of course some can be very spicy.
Tofu is often used (soyabean curd) which for vegetarians is a great alternative to meat. They are mostly served bland, so on the table you would have such items as fish sauce (sometimes with thinly cut chillies floating in it), chilli powder, sugar and white vinegar which you add in varying amounts to suit your taste
Traditional Thai soup recipes will use all parts of the meat, nothing is wasted, so chicken feet and heads is not unusual. Don’t worry we don’t use them in our recipes as we are catering for the western palate.
