Kaffir Lime Leaves

lime+leaves Just so you know the differences between old and new kaffir lime leaves and how they affect your food.
If you are using old lime leaves, you use less (weight for weight) than young leaves as they have a much stronger flavour, also it’s best to remove the stems from old leaves as they are very woody.

If you are having difficulty getting hold of Kaffir lime leaves, try using some ordinary lime peel, (not shredded) but very finely sliced as in this video.

It is much easier to get hold of these of late, you will usually get them frozen which for our intents and purposes is fine.

In Some recipes we tear the leaves, in this instance, if using lime peel as a substitute, tear the peel rather than slicing.

Khwanjai’s Top Tips:

When using frozen Lime leaves only remove the leaves you will use and keep the rest frozen or they will go bad over a few hours.
